There’s a real turning point in every sourdough baker’s life where you stop staring guiltily at a jar of discard and start seeing it as an ingredient instead of a problem. This recipe is where I landed.
A few tablespoons of butter, a hearty dusting of everything bagel seasoning, and the discard I used to feel bad about tossing turns into the kind of cracker that disappears off a cheese board in about four minutes flat. My kids ask for these by name now, which still catches me off guard every time — we’re a family that fights over crackers, apparently. They’re snappy, salty, a little garlicky, and completely addictive with nothing more than a good sharp cheddar next to them.
If you’ve got a jar of discard sitting in your fridge right now feeling neglected, this is its moment.

Sourdough Crackers with Everything Bagel Seasoning
Ingredients
- 3/4 cup Sourdough discard
- 2 Tbsp butter
- 2 tsp Everything but the Bagel Seasoning
Instructions
- Preheat your oven to 325°F and line a baking sheet with parchment paper. Melt the butter in a mixing bowl and let cool.
- Mix sourdough discard, butter and herbs until smooth.
- Line a cookie sheet with parchment paper, and pour the mixture onto the paper, spreading with a spatula until even.
- Bake for 10 minutes, remove and score (use a pizza cutter) into cracker size pieces.
- Return to oven to cook for approximately 30 more minutes.
- Remove from oven, cool and enjoy!
