Not every sourdough discard cracker needs to shout — sometimes it just needs a little French countryside energy. This version came out of a week when I had two things on hand: a jar of discard I needed to use and a nearly-empty tin of Herbs de Provence I didn’t want to waste. Turns out that’s a pretty magical combination. The lavender and thyme notes come through just enough to make these feel a little more elevated than your average snack, without any extra effort on your part.
They’re the crackers I reach for when I want something that looks like I tried harder than I did — perfect next to a soft cheese, a glass of wine, or just eaten straight off the pan while it’s still warm. If the Everything Bagel version is your weekday snack, consider this one your Friday night cheese board.

Sourdough Crackers with Herbs de Provence
Ingredients
- 3/4 cup Sourdough discard
- 2 Tbsp butter
- 2 tsp Herbs de Provence
- 1/4 tsp salt
Instructions
- Preheat your oven to 325°F and line a baking sheet with parchment paper. Melt the butter in a mixing bowl and let cool.
- Mix sourdough discard, butter, salt and herbs until smooth.
- Line a cookie sheet with parchment paper, and pour the mixture onto the paper, spreading with a spatula until even.
- Bake for 10 minutes, remove and score (use a pizza cutter) into cracker size pieces.
- Return to oven to cook for approximately 30 more minutes.
- Remove from oven, cool and enjoy!
