Some recipes come from cookbooks, and some come from people you love — this one’s the second kind. My friend handed me this chicken salad recipe years ago, and it’s been on repeat in my kitchen ever since. It starts with a rotisserie chicken, which is basically the greatest shortcut in home cooking, shredded and folded into a creamy mix of sour cream and mayo with just enough celery for crunch. The seasonings do the quiet work here, rounding everything out until it tastes like something you’d get at a little café, not something you threw together on a Tuesday.
It’s the kind of recipe that gets requested for showers, lunches, and lazy summer dinners eaten straight out of the bowl standing at the counter. I make a batch, and it never makes it to the next day.
