Parmesan Crusted Chicken

There’s a very short list of dinners that get zero complaints at my table — three boys, one husband, and a boxer dog who thinks he’s also entitled to a vote. This parmesan crusted chicken recipe is at the top of that list. It’s crispy on the outside, juicy on the inside, and it comes together with ingredients I almost always have on hand: chicken breasts, panko breadcrumbs, and a big handful of parmesan cheese.

Parmesan Crusted Chicken

This parmesan crusted chicken is crispy, golden, and delicious. Panko breadcrumbs and real parmesan give it that perfect crunch, while oven-baking keeps the chicken juicy every single time

Ingredients
  

  • 1 pound chicken breast
  • 1/2 cup mayonnaise
  • 1/2 tsp smoked paprika (heaping 1/2 tsp)
  • 1/2 tsp garlic powder (heaping 1/2 tsp)
  • 1/2 tsp salt (heaping 1/2 tsp)
  • 1/4 tsp ground pepper
  • 1/2 cup freshly grated Parmesan cheese (or mix with Asiago)
  • 1 cup Panko bread crumbs
  • cooking spray

Instructions
 

  • Preheat oven to 425
  • Line a cookie sheet with parchment paper or foil, set a cooking rack on top.
  • In a bowl, stir mayonnaise, paprika, garlic powder, salt, pepper.
  • On a plate or shallow bowl, coming cheese and breadcrumbs.
  • Brush each chicken breast with mayonnaise mixture on both sides.
  • Coat each piece of chicken in the Panko mixture – press both sides to cover completely.
  • Place the chicken on the wire racks, spray the top with cooking oil to help it brown.
  • Cook chicken for 15 minutes on the first side – set the oven to low broil for the last 2 minutes. Flip chicken over, reset oven to 425 and cook 15 minutes on the second side, set to low broil for an additional 2 minutes.
