
In our house, birthdays taste like chocolate.
Not just any chocolate cake — this one. A rich devil’s food layer cake dotted with melty chocolate chips, stacked high and slathered in silky mocha frosting, then finished with a generous shower of sprinkles. It’s the cake that marks every candle blown out, every off-key rendition of “Happy Birthday,” and every year growing just a little sweeter.
This isn’t a once-in-a-while recipe. It’s our tradition.
The cake itself is deeply chocolatey and impossibly moist, with chocolate chips tucked inside for surprise pockets of goodness in every slice. The mocha icing adds just enough coffee to deepen the flavor without overpowering it — smooth, creamy, and perfectly spreadable (even if your layers aren’t bakery-perfect… ours rarely are).
And the sprinkles? Non-negotiable. They’re the final touch that says this cake is meant to be celebrated — joyfully, loudly, and probably with frosting on someone’s nose.
Every family has that one dessert that shows up year after year. This is ours. The cake everyone requests. The one that disappears before the candles are even cleared away. The one that makes birthdays feel like birthdays.

Chocolate Mocha Layer Cake
Ingredients
Icing
- 5 1/3 cup confectioners sugar
- 1/2 cup cocoa
- 12 Tbsp butter softened
- 4 Tbsp strong coffee brewed
- 5-6 Tbsp milk
- 2 tsp vanilla extract
Cake Ingredients
- Devils Food Cake Mix Dunkin Hines
- water, oil, eggs
- Non-pariel sprinkles
- 1 cup mini chocolate chips
Instructions
Make the Cake
- Bake cake as directed, fold in the chocolate chips as the last step then bake using 2 round pans.
Make the Icing
- Combine confectioners sugar and cocoa.. Cream butter with 1 cup coca mixture. Add remaining cocoa mixture alternately with coffee and milk beating to spreading consistency. Blend in vanilla. Makes about 4 cups (enough to generously ice cake).
Ice and Decorate the Cake
- Seperate the 2 round cakes, place the bottom cake down and generously add icing to the top of the cake. Place the other cake on top and completely ice the sides and top.
- Hold the cake over the sink and shake sprinkles all over.
- Use icing from the store to write on cake.
