There’s something about shrimp scampi that feels just a little special — but in the best, most effortless way. It’s the kind of meal that sounds impressive, tastes restaurant-worthy, and still comes together on a busy weeknight without breaking a sweat.

Around here, shrimp scampi is our “let’s sit at the table a little longer” dinner. Buttery shrimp, plenty of garlic, a squeeze of fresh lemon, and a splash of white wine tossed with tender pasta — simple ingredients that somehow feel celebratory. Add a loaf of crusty bread for soaking up the sauce (non-negotiable), and you’ve got yourself a meal worth gathering for.

What I love most about this recipe is how quickly it comes together. In less than 30 minutes, you can have a flavorful, comforting dish that feels like you tried much harder than you did. It’s perfect for date night at home, a casual dinner with friends, or one of those evenings when you just need something bright and delicious on the table.

It’s unfussy. It’s flavorful. It’s a little messy in the best way — especially when everyone is reaching for that last bite.

And that’s exactly how we like it.

Shrimp Scampi

Easy Shrimp Scampi recipe, delicious every time!

Ingredients
  

  • 1/4 cup olive oil
  • 1.5 lb peeled and deveined large shrimp
  • 4 garlic cloves pressed
  • 1/2 cup white wine
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 5 tablespoons butter
  • 1 Box of angel hair pasta
  • 1/2 cup parsley chopped
  • 1 lemon

Instructions
 

  • Bring water to a boil, add salt to cook the pasta. Meanwhile in a large heavy skillet heat oil over medium high heat, then sauté shrimp, turning over once, until just cooked through, about 2 minutes and transfer with a slotted spoon to a big bowl to save for later.
  • Add garlic to oil remaining in skillet along with wine, salt and pepper and cook over high heat stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat. Cook pasta until just tenter, about 3 minutes.
  • Reserve 1 cup pasta-cooking water, then drain pasta.
  • In a large bowl, toss pasta and shrimp mixture, add some of the reserved cooking water if needed to keep moist..  Squeeze the juice of 1 lemon and stir, top with chopped parsley. 
  • Serve with grated Asiago cheese.
