
These yummy Chicken Salad Pitas are quick and easy and like to pair with French Fries! With just a few ingredients, this recipes is a tasty twist on a traditional chicken salad sandwich.
Marine and Grill the Chicken: If you’ve made any of my recipes that use grilled chicken, you know I love to marinate my chicken in a mixture of olive oil, garlic, salt and pepper prior to grilling. This recipes is no exception!

Make the sauce: While the chicken is cooking on the grill, combine the mayo, mustard, red pepper, salt and pepper. Be sure to dice your peppers nice and small to they add a bit of flavor and crunch without overpowering each bite. Cut your lettuce up nice and small. Romaine lettuce adds a nice extra crunch, power greens lettuce adds more nutrients to the meal – both lettuces are great options!
Toast the Pitas: Cut the whole pitas in half before toasting. I like to get my pitas as toasted as possible while still being able to easy open them.
Put it all together: Remove the chicken from the grill and dice up. Add the chicken to the mayo mixture, toss, add the lettuce and toss agin. Stuff your pitas with the chicken salad and enjoy!

Chicken Pitas
Ingredients
- 2-3 Chicken Breasts, Grilled
- 1/2 Cup Mayonnaise
- 2 tsp Dijon Mustard Grey Poupon
- 1/4 Red Pepper (1/4 of the pepper, deseeded and diced)
- Pita Pockets (whole wheat)
- 2 Cups Lettuce
- Salt & Pepper
Instructions
- Grill Chicken Breasts (lightly marinated in olive oil, salt and pepper).
- Mix mayo and mustard together, add salt and pepper, add red pepper and stir.
- Remove chicken from grill and dice chicken while it's still warm. Add chicken to mayo mixture and toss, add lettuce to mixture and toss a final time.
- Toast the pitas (cut in half prior to toasting).
- Once toasted to your liking, fill the pitas with the chicken salad mixture.
